Crab & Avocado Tower with Caviar

INGREDIENTS

Ingredients:

· For the Crab Layer:
  · 200g (7 oz) fresh lump crab meat, carefully picked over for shells
  · 1 tbsp high-quality mayonnaise
  · 1 tsp fresh lemon juice
  · 1 tbsp very finely minced celery
  · 1 tsp fresh chives, chopped
  · Salt and white pepper, to taste
· For the Avocado Layer:
  · 1 large ripe but firm avocado
  · 1 tsp fresh lime juice
  · A pinch of salt
· For Assembly & Garnish:
  · 2-3 imitation crab sticks (kanikama), finely shredded
  · 1 jar/tin (30-50g) high-quality caviar (Oscietra, Kaluga or Amur Fusion from Attilus Caviar range)
  · Microgreens or additional chives, for garnish
  · A 3-inch (7-8 cm) ring mold

METHOD

A clean, elegant appetizer where the sweetness of crab, the buttery texture of avocado, and the luxury of caviar are the stars.

Instructions:

1. Prepare the Crab Layer:

· In a bowl, gently combine the lump crab meat, mayonnaise, lemon juice, celery, and chives. Season lightly with salt and white pepper. Cover and refrigerate.

2. Prepare the Avocado:

· Cut the avocado into small, neat cubes (about ¼-inch).
· Place the cubes in a small bowl. Drizzle with the lime juice and a pinch of salt. Gently toss to coat. This seasons the avocado and prevents browning.

3. Assemble the Towers:

· Place the ring mold in the center of a serving plate.
· First Layer: Spoon the chilled crab mixture into the mold, pressing down gently to create an even, compact base. Fill the mold about halfway.
· Second Layer: Carefully place the seasoned avocado cubes on top of the crab layer, creating a flat surface.
· Third Layer: Sprinkle the shredded crab sticks evenly over the avocado.
· Carefully lift the ring mold straight up to reveal the tower. Repeat for the remaining servings.

4. The Final Garnish:

· Just before serving, place a generous spoonful of caviar on top of each tower.
· Garnish the plate with a few microgreens.

Serve immediately. The cool, creamy avocado cubes provide a perfect textural contrast to the flaky crab and the popping caviar.
